Beat the summer heat with this delicious, icy treat! It’s the perfect recipe to cool down after a long day in the sun – and super easy to make!

Ingredients
2/3 cup frozen raspberries
1/4 cup icing sugar
1 cup sparkling mineral water
Method
Heat the frozen raspberries and icing sugar in a small saucepan over low heat, stirring occasionally for about 5 minutes until the raspberries soften.
Using the back of a large spoon, push the raspberry mixture through a sieve into a medium jug. Discard seeds.
Stir the mineral water into the jug. Pour into the molds, and press lids on firmly. Freeze for 6 hours or overnight. If you don’t have a mold, you can use large ice cube trays or plastic cups instead!
For best results, freeze the popsicles for 6 hours or overnight. To remove popsicles if you used a mold, dip into hot water for a few seconds, loosen lids, and squeeze the side of the mold.
